Welcome back to the kitchen! Today, we’re whipping up a batch of Christmas Jam. This delightful spread is perfect for the holidays, or anytime you want to sweeten up a moment! I found some cranberries in my freezer that I bought on sale last season, so it’s time to clear them out and make some jam. We’ll be using strawberries, cranberries, sugar, and a bit of Sure-Jell to bring this festive treat to life. Ready to get started? Let’s jump in!

Ingredients:
3 cups of crushed strawberries
2 cups of crushed cranberries
7 cups of sugar
1 pack of Sure-Jell (pectin)
Optional Add-Ins:
For a spicy twist, try adding 3 seeded and chopped jalapeños or a handful of crushed Hatch peppers!

Instructions:
Prep the Berries:
First things first, crush your strawberries and cranberries. I like mine a little chunky, so I don't over-process them. You’ll need 3 cups of crushed strawberries and 2 cups of crushed cranberries. Once you’ve got your measurements, set them aside for a minute.

Sterilize Your Jars:
While you’re working on the berries, make sure your jars are prepped. I’ve washed mine and popped them in the oven at 200°F to keep them hot until they’re ready to use. Don’t forget to simmer your lids in a small pot of water as well!

Cook the Jam:
In a large pot, mix your crushed strawberries and cranberries together. If you want that spicy kick, this is the time to add your jalapeños or Hatch peppers! Now, bring the mixture to a boil and add in the Sure-Jell. Stir everything together until it’s well combined.

Add the Sugar:
Once your berry mixture is at a rolling boil (the kind you can’t stir down), add in your sugar—7 cups worth! Stir continuously to dissolve the sugar. Bring it back up to a boil and let it cook for two more minutes.

Jar it Up:
After your two-minute boil, it’s time to ladle the hot jam into your sterilized jars. Wipe the rims of your jars with vinegar water to ensure a clean seal, and place the lids on fingertip-tight. Be sure to leave about a half-inch of headspace.

Water Bath:
Place the jars in your water bath canner. Bring the water to a boil and process the jars for 10 minutes. After that, remove the jars and let them sit undisturbed until fully cooled.

Enjoy:
Once your jars have cooled, check the seals and store them in a cool, dry place. This jam is perfect on cornbread, biscuits, or even as a holiday gift! It’s sweet, slightly tart, and if you added peppers, it has a nice kick too.

Final Tips:
If you’re feeling adventurous, try different peppers like serrano for a different flavor profile.
Christmas Jam also pairs beautifully with cream cheese on crackers for a quick and festive appetizer.
