Hey everyone today, we're making zucchini fritters that are crisp on the outside with tender centers, and they're so easy to make. These have been a family favorite for years.

Ingredients:
2 large zucchinis
1 teaspoon salt (for drawing out moisture)
2 large eggs, lightly beaten
1/2 cup chopped green onions
1 cup flour
1/2 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon baking powder
2 tablespoons oil (for frying)

Instructions:
Prepare the Zucchini:
Wash the zucchinis and trim off the ends.
Grate the zucchinis on the large holes of a box grater or use the grater attachment of a food processor.
Place the grated zucchini into a large mixing bowl or a colander set over the sink.
Stir in 1 teaspoon of salt and let it sit for 10 minutes to draw out the excess water.

Remove Excess Water:
After 10 minutes, squeeze the zucchini dry with your hands or a cheesecloth to remove as much water as possible.

Mix Ingredients:
In a large mixing bowl, combine the squeezed zucchini, 2 lightly beaten eggs, and 1/2 cup of chopped green onions.

In a small bowl, stir together 1 cup of flour, 1/2 teaspoon of salt, 1/2 teaspoon of black pepper, and 1 teaspoon of baking powder.
Add the flour mixture to the zucchini mixture and stir until well combined.

Cook the Fritters:
Place a large pan over medium-high heat and add 2 tablespoons of oil.
Once the oil is hot, add the zucchini fritter mixture by heaping tablespoons, slightly flattening out the tops.
Sauté for about 4 minutes per side or until golden brown, adding more oil as needed.

Serve:
Serve the fritters hot with a dollop of sour cream on top.
Optionally, garnish with extra green onions or herbs.
