Ingredients:
2 large chicken breasts (about 1 1/2 pounds)
Salt
Black pepper
Garlic powder
1 tablespoon olive oil
1 tablespoon unsalted butter
8 ounces mushrooms (white or brown), thickly sliced
3 garlic cloves, minced
1/4 cup sun-dried tomatoes, drained and chopped
1/2 cup green onion or chives, chopped
1 and 1/2 cups heavy whipping cream
1/2 cup shredded Parmesan cheese
2 cups fresh baby spinach leaves

Instructions:
Prep the Ingredients:
Slice the mushrooms, mince the garlic, chop the sun-dried tomatoes, and chop the green onions. Set all aside.
Slice the chicken breasts in half lengthwise to create four chicken cutlets. Season both sides with salt, black pepper, and garlic powder.

Cook the Chicken:
Heat a large skillet over medium heat and add 1 tablespoon of olive oil and 1 tablespoon of unsalted butter.
Add the seasoned chicken to the hot skillet in a single layer. Saute for about 3-5 minutes on each side until golden brown and the internal temperature reaches 165°F. Transfer the chicken to a plate.
