Hello everyone! Welcome to Natalya Mikhailova Recipes. Today, I'm excited to share an exceptional and reliable recipe for pickling cucumbers. This method has consistently produced crystal-clear jars of pickles, unlike last year when one out of ten jars turned cloudy.
Ingredients:
Cucumbers: Fresh and washed
Water: For soaking and brining
Garlic: Cut into three parts
Pepper: Sterilized
Bay Leaf: Sterilized
Salt: 1 tablespoon per liter of water
Sugar: 2 tablespoons per liter of water
Vinegar Essence (70%): 1 teaspoon per 2-liter jar
Steps to Perfect Pickled Cucumbers:
Step 1: Soaking the Cucumbers
Soak the Cucumbers: Place the cucumbers in a large bowl filled with cold water. Weigh them down to ensure they are fully submerged. Let them soak for 3 hours.
Step 2: Washing and Preparing
Wash the Cucumbers: After soaking, rinse each cucumber thoroughly under running water.
Step 3: Sterilizing
Sterilize Jars and Lids: Preheat the oven and sterilize the jars and lids by boiling them. Place the jars in the oven and lids in boiling water.
Step 4: Initial Blanching
Blanch the Cucumbers: Boil water and pour it over the cucumbers. Cover and let them sit for 15 minutes.
Drain the Water: After 15 minutes, drain the water completely.
Step 5: Making the Brine
Prepare the Brine: For every liter of water, add one tablespoon of salt and two tablespoons of sugar. For a 4-liter brine, add four tablespoons of salt and eight tablespoons of sugar.
Boil the Brine: Bring the brine mixture to a boil.
Step 6: Assembling the Jars
Add Garlic, Pepper, and Bay Leaf: Cut the garlic into three parts, depending on the size, and place it in each jar along with the pepper and bay leaf.
Fill the Jars with Cucumbers: Place the washed and blanched cucumbers into the sterilized jars.
Step 7: Adding the Brine
Pour the Brine: Pour the boiling brine into the jars filled with cucumbers.
Add Vinegar Essence: Add one teaspoon of 70% vinegar essence per 2-liter jar. Pour the vinegar essence into the water, not directly onto the cucumbers.
Final Steps:
Seal the Jars: Ensure the jars are tightly sealed with sterilized lids.
Cool Down: Allow the jars to cool down to room temperature.
Store: Store the jars in a cool, dark place. These pickles can be enjoyed all year round!
Enjoy Your Pickled Cucumbers!
