Introduction
Hi everyone and welcome back to my kitchen! Today, I’m back with another fall-inspired recipe that you’re going to love. I’ll be making my Maple Glazed Pumpkin Spiced Éclairs, and they are so good. I love everything about them! We’re going to start with a spiced pâte à choux, adding nutmeg and cinnamon directly into the dough. Then, we’ll make a pumpkin spice whipped cream filling and finish them off with a maple glaze. The flavors come together so well, making this the ultimate fall dessert.

Ingredients
For the Pâte à Choux:
1 cup sifted flour
1/2 tsp ground cinnamon
1/4 tsp ground nutmeg
1/4 tsp salt
1/2 cup unsalted butter
1 cup water
4 large eggs
For the Pumpkin Spice Filling:
1/3 cup softened cream cheese
1/3 cup pumpkin puree
1/8 tsp ground nutmeg
1/4 tsp ground cinnamon
1/2 tsp maple syrup extract
1 cup chilled heavy cream
1 cup confectioner's sugar
For the Maple Glaze:
1 and 1/2 cups confectioner's sugar
2 tbsp heavy cream
1/4 cup maple syrup

Instructions
Prepare the Pâte à Choux:
Preheat your oven to 425°F (220°C).
In a bowl, mix together the flour, cinnamon, nutmeg, and salt. Set aside.

2

In a medium saucepan, combine the butter and water over high heat. Once the butter has melted and the mixture comes to a boil, add the dry ingredients all at once.
Stir vigorously until the mixture forms a ball and pulls away from the sides of the pan. Transfer the dough to a mixing bowl and let it cool for about 10 minutes.

3

Add the Eggs:
Add the eggs one at a time, beating well after each addition until fully incorporated. The dough should be smooth and glossy.
Transfer the dough to a large pastry bag fitted with a star tip (tip #8FT). Pipe the dough onto a baking sheet lined with a silicone mat or parchment paper.

Bake the Éclairs:
Bake the éclairs at 425°F for 10 minutes, then reduce the temperature to 375°F (190°C) and bake for an additional 30-35 minutes until they are golden brown.
Remove from the oven and allow them to cool completely on a wire rack.

4

Make the Pumpkin Spice Filling:
In a bowl, combine the cream cheese, pumpkin puree, nutmeg, cinnamon, and maple syrup extract. Whisk until smooth.
In a separate bowl, beat the heavy cream and confectioner's sugar until stiff peaks form.
Gently fold the pumpkin mixture into the whipped cream until well combined. Transfer the filling to a pastry bag fitted with a filling tip .

5

Prepare the Maple Glaze:
In a bowl, whisk together the confectioner's sugar, heavy cream, and maple syrup until smooth. Adjust the consistency as needed by adding more cream or syrup.

Assemble the Éclairs:
Use the filling tip to fill each éclair with the pumpkin spice filling.
Dip the top of each éclair into the maple glaze, letting any excess drip off. Place the éclairs on a wire rack to set.
For an extra touch, garnish with gold sprinkles or melted chocolate.

6

Enjoy:
Let the éclairs sit until the glaze is set, then serve and enjoy.

Conclusion
These Maple Glazed Pumpkin Spiced Éclairs are not only beautiful but also incredibly aromatic. The moment the pâte à choux hits the oven, your kitchen fills with an amazing pumpkin spice aroma. The flavors of the pumpkin spice filling and maple glaze come together perfectly, making this a dessert you’ll want to make over and over again.
