Hi everyone. Today, we're making a family favorite: Irresistible Cheesy Chicken Fritters! You'll make these again and again.

Ingredients:
Chicken Mixture:
3 large chicken breasts, diced (pieces should be 1/4 to 1/3 inch thick)
4 ounces (1 1/3 cups) shredded mozzarella cheese
2 large eggs
1/3 cup mayonnaise
1/3 cup flour
1 et 1/2 tablespoons fresh dill, chopped
1/2 teaspoon salt
Generous pinch of black pepper
For Cooking:
2 tablespoons oil (for frying)

Instructions:
Prepare the Chicken Mixture:
Dice 3 large chicken breasts into pieces about 1/4 to 1/3 inch thick.
Transfer the diced chicken to a large mixing bowl.

Add 4 ounces (1 et 1/3 cups) shredded mozzarella cheese, 2 large eggs, 1/3 cup mayonnaise, 1/3 cup flour, and 1 et 1/2 tablespoons chopped fresh dill.

Season with 1/2 teaspoon salt and a generous pinch of black pepper.
Stir until well combined.

Cover and refrigerate for about 2 hours or overnight for best results.

Cook the Fritters:
Once ready to cook, place a large nonstick pan over medium heat and add 2 tablespoons of oil.
When the oil is hot, add the chicken mixture, a heaping tablespoon at a time, into the pan.
Pat down the fritters with the back of a spoon if needed.
Saute uncovered for 3-4 minutes on the first side, then flip and saute uncovered for another 3 minutes, or until golden brown and fully cooked through.

Serve and Enjoy:
Serve the fritters hot, optionally with a quick garlic aioli or your favorite dipping sauce.

Taste Test:
These cheesy chicken fritters are incredibly juicy and flavorful. The chicken breast becomes tender and the dill and cheese add an amazing taste. The golden crust from the cheese on top is just delicious. They are always a crowd-pleaser and kids love them too, which is definitely a plus.

Quick Garlic Aioli Recipe:
Ingredients:
1/2 cup mayonnaise
2 cloves garlic, minced
1 tablespoon lemon juice
Salt and pepper to taste

Instructions:
Mix all ingredients in a bowl until well combined.
Serve with the fritters for an extra burst of flavor.
