Hi everyone, i love blueberries , i love to incorporate them into a lot of my desserts. So today, I'm sharing my Lemon and Blueberry Loaf. This is perfect to go with your pumpkin latte, a little coffee, or maybe some hot mocha. It's so, so good! This loaf is very moist and flavorful, with lots of lemon flavor and plenty of plump, juicy, delicious blueberries. To finish everything off, we add a lemon glaze on top. It's super, super easy to make, so let's get started!

Ingredients:
Wet Ingredients:
2 large eggs (room temperature)
1/2 cup melted butter
1/2 teaspoon vanilla extract
3/4 cup white granulated sugar
1/4 cup lemon juice
1 tablespoon lemon zest
1/2 cup plain Greek yogurt (unsweetened)
Dry Ingredients:
1et 1/2 cups all-purpose flour
1/4 teaspoon salt
1 et 1/2 teaspoons baking powder
For the Blueberries:
1 et 1/2 cups blueberries (fresh or frozen)
2 tablespoons flour
For the Lemon Glaze:
2 tablespoons lemon juice
1/2 cup confectioners' sugar

Instructions:
Preheat your oven to 350°F (175°C).

Prepare the wet ingredients:
In a large bowl, cream together 2 large eggs, 1/2 cup melted butter, 1/2 teaspoon vanilla extract, and 3/4 cup white granulated sugar until smooth.
Add 1/4 cup lemon juice, 1 tablespoon lemon zest, and 1/2 cup plain Greek yogurt to the mixture. Mix well.

Prepare the dry ingredients:
In a separate bowl, combine 1 et 1/2 cups all-purpose flour, 1/4 teaspoon salt, and 1 et 1/2 teaspoons baking powder. Mix with a spoon.

Combine wet and dry ingredients:
Gradually add the dry ingredients to the wet mixture, whisking until you have a smooth batter with no clumps.

Prepare the blueberries:
Toss 1 et 1/2 cups blueberries with 2 tablespoons flour to help keep them suspended in the loaf.

Fold in the blueberries:
Gently fold the floured blueberries into the batter using a spatula.

Prepare the loaf pan:
Line a 9x5-inch loaf pan with parchment paper and spray the sides with nonstick spray.
Pour the batter into the prepared loaf pan, spreading it evenly.

Bake the loaf:
Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
Allow the loaf to cool completely on a wire rack.

Prepare the lemon glaze:
Mix 2 tablespoons lemon juice with 1/2 cup confectioners' sugar until smooth.

Glaze the loaf:
Pour the lemon glaze over the cooled loaf, spreading it back and forth to cover the top.

Serve:
Slice the loaf with a long serrated knife and enjoy all the juicy blueberries and lemony flavor in every bite.
