I spent most of my childhood summer vacations in Elton, Georgia, visiting my family where peaches were plentiful. So, I couldn't let this summer go by without a throwback to my childhood. Today, we are making this amazing fresh peach iced tea. It's easy, it's so refreshing, and it just screams summer. Let's get started!

Ingredients
3 large peaches, diced
Zest of 1 lemon (optional)
1 cup granulated sugar
4 cups water (for the peach syrup)
6-8 black tea bags
6 cups boiling water (for the tea)
Ice cubes
Fresh mint for garnish

Instructions:
Step 1: Prepare the Peach Syrup
Dice the Peaches: Start with three big, juicy peaches and dice them into small cubes. Add the diced peaches to a large saucepan.

Add Lemon Zest: If you enjoy a hint of lemon in your iced tea, add the zest of one lemon to the saucepan.
Add Water and Sugar: Pour in 4 cups of water and add 1 cup of granulated sugar. Stir to combine.
Simmer the Mixture: Bring the mixture to a simmer over medium-low heat. Cover and let it simmer for about 15-20 minutes until the peaches are soft and the kitchen smells like peach pie.

Mash the Peaches: After simmering, use a potato masher to gently mash the peaches, releasing more juice.
Strain the Syrup: Strain the mixture through a fine mesh strainer into a bowl or pitcher, pressing down to extract all the liquid. Discard the solids (or save them for another use like jam).

Brew the Tea: Bring 6 cups of water to a boil. Remove from heat and add the tea bags. Let the tea steep for about 15 minutes.
Remove Tea Bags: After steeping, remove the tea bags without squeezing them.

Mix the Tea and Syrup: Pour the brewed tea into a large pitcher. Add the peach syrup and stir to combine.
Adjust Sweetness: Add additional water, a cup at a time, until you reach your desired sweetness and strength.
