Green tomatoes (small to medium-sized)
Bay leaves
Allspice (3 pieces per jar)
Black peppercorns (6-7 pieces per jar)
Garlic (2-3 large cloves, cut into pieces)
Hot pepper (to taste)
Fresh dill (or dill umbrellas)
Fresh parsley
Boiling water
Sugar (1 teaspoon per 1.5-liter jar)
Salt (1 tablespoon per 1.5-liter jar)
Vinegar (1.5 tablespoons of 9% vinegar per jar)
Instructions
Preparing the Tomatoes
Wash and Trim: Start by thoroughly washing your green tomatoes. Use a sharp knife to carefully cut out the stalks.
Prepare the Jars: Use 1.5-liter jars for this recipe. Place one bay leaf, 3 allspice berries, and 6-7 black peppercorns at the bottom of each jar.
Adding Aromatics and Tomatoes
Garlic and Hot Pepper: Add 2-3 cloves of garlic (cut into pieces) and hot pepper to taste to each jar.
Herbs: Place a little dill and parsley at the bottom of the jar. If you have dill umbrellas, use them for a more fragrant result.
Fill with Tomatoes: Pack the jars with tomatoes. After filling halfway, add more dill and parsley, then continue to fill the jars to the top with tomatoes.
Initial Boiling and Standing
Boiling Water: Pour boiling water into the jars until they are filled to the top. Cover the jars with lids and let them stand for 15 minutes.

Drain the Water: After 15 minutes, use a special lid to drain the water from the jars. This water will not be reused.
Second Boiling and Standing
Refill with Boiling Water: Fill the jars again with boiling water, cover with lids, and let them stand for 20 minutes to warm the tomatoes thoroughly.
Drain the Water Again: After 20 minutes, drain the water from the jars.

Add Sugar, Salt, and Vinegar: For each 1.5-liter jar, add 1 teaspoon of sugar, 1 tablespoon of salt, and 1.5 tablespoons of 9% vinegar.
