Hey y'all, there's nothing I love more than getting together with friends for some good food and great times. Today, I'm sharing one of my supper club favorites: Burt's Southern Fried Chicken. This dishe is perfect for any gathering and are sure to impress your friends.
Ingredients:
1 whole chicken, cut into pieces
3 cups self-rising flour
3 eggs
1/3 cup milk
Peanut oil for frying
Salt and pepper
Instructions:
Prepare the Chicken:
Season the chicken pieces generously with salt and pepper, making sure to cover all sides.
Place the seasoned chicken in the refrigerator for at least an hour to allow the flavors to penetrate and the meat to firm up slightly.
Coat the Chicken:
In a shallow dish, beat the eggs with the milk until well combined.
Dip each piece of chicken into the egg mixture, ensuring it is fully coated.
Transfer the chicken to a separate dish filled with self-rising flour. Roll and press the flour into the chicken to ensure a thick, even coating.
Fry the Chicken:
Heat a generous amount of peanut oil in a cast iron skillet over medium heat until it reaches about 350°F.
Begin by frying the dark meat pieces (thighs and legs) first, as they take longer to cook. Place them gently into the hot oil, being careful not to overcrowd the skillet.
Fry the chicken, turning occasionally, until each piece is golden brown and cooked through, about 10-12 minutes for the dark meat.
Follow the same process with the white meat pieces (breasts and wings), ensuring they are also fried to a golden brown perfection.
Drain:
As each piece of chicken finishes cooking, transfer it to a plate lined with paper towels to drain off excess oil. This will help keep the chicken crispy.
Allow the fried chicken to rest for a few minutes before serving, giving the coating time to set and the juices to redistribute within the meat.
